Nous cueillons les olives soigneusement à la main quand elles sont encore vertes-oranges, mais déjà presque mûres, et après leur séparation par variétés, nous les broyons dans les 5 à 7 prochaines heures dans notre propre huilerie, à des températures inférieures à 28° C, sans eau ajouté.
