Fluffy cookies with raspberry jam

400gr self-rising flour
250gr extra virgin olive oil
120gr powdered sugar
2 tablespoon vanilla
raspberry jam


  1. In a bowl, add the flour, extra virgin olive oil, powdered sugar and vanilla. Mix well.
  2. Make small-medium balls with the dough and put them on a pan.
  3. Press each ball, forming a dent in its center. Add the raspberry jam in each dent.
  4. Bake in a preheated oven at 180°C (Fan) for 20 minutes.

Dust them with powdered sugar and enjoy!

Hint: If you love cinnamon, you can add some in the dough.
