Secrets for the perfect Greek coffee

  1. Coffee pot: Add 70ml of water, at room temperature, to a clean and dry coffee pot with a narrow neck.
  2. Heat: We turn on the gas on low heat and place the coffee pot.
  3. Dosage: Add 7gr of coffee and about 4gr of sugar for a medium-sweet Greek coffee. Mix well with a spoon to completely homogenize the ingredients.
  4. Foam: The coffee and water (and sugar) are mixed together and heated slowly (not quickly!) until a foam forms on the top. This light, creamy froth is called 'kaimaki'. As soon as the foam is properly formed the coffee is removed from the heat.
  5. Serving: Serve slowly in a classic Greek coffee cup (or small, espresso style cup).
