The organic thyme honey is produced by the Soukas family, in Lefkada. It is considered high-quality honey. It belongs to the flower honey, but it is a separate category due to its intense aromatic and taste characteristics. Its production amounts to approximately 10% of the total honey production of Greece.

Pine honey is produced by the Soukas family in northern Evia. It constitutes 65% of the total honey production in Greece and comes from the honey secretions of the insect Marchalina hellenica, when it parasitizes in Aleppo and Pinus brutia.

A honey with a special aroma and high nutritional value due to the high percentage of ash it contains and the large number of different substances in its composition (calcium, magnesium, zinc, iron, copper).
