The leaves and blossoms of thyme with the strong, mildly spicy rich flavour are used as a spice for scenting various foods. The two basic essential oils contained in thyme, thymol and carvacrol, give thyme special antibacterial, antifungal and antiseptic properties.
Pine honey is produced by the Soukas family in northern Evia. It constitutes 65% of the total honey production in Greece and comes from the honey secretions of the insect Marchalina hellenica, when it parasitizes in Aleppo and Pinus brutia.

Thyme honey is produced by the Soukas family in Lefkada. It is considered to be an excellent quality honey. It is in the bouquet, but in fact it is a special category because of intense aromatic and flavor characteristics. Its production amounts to about 10% of the total honey production in Greece.
