A slice of fig meze, hides the excellent fig from Kymi, mixed with the thyme of its mountains, together with the famous Kalamon black olives. The quartet is completed with balsamic vinegar from the vineyards of the Peloponnese.

The organic thyme honey is produced by the Soukas family, in Lefkada. It is considered high-quality honey. It belongs to the flower honey, but it is a separate category due to its intense aromatic and taste characteristics. Its production amounts to approximately 10% of the total honey production of Greece.
The leaves and blossoms of thyme with the strong, mildly spicy rich flavour are used as a spice for scenting various foods. The two basic essential oils contained in thyme, thymol and carvacrol, give thyme special antibacterial, antifungal and antiseptic properties.
Pine honey is produced by the Soukas family in northern Evia. It constitutes 65% of the total honey production in Greece and comes from the honey secretions of the insect Marchalina hellenica, when it parasitizes in Aleppo and Pinus brutia.
